WHere is a simplified version of a beverage found on a new drinks list. It's a large-volume premix that's bursting with flavours of the Christmas time, rendering it excellent for hosting a festive gathering. Reserve the remaining syrup you can use for morning drinks, puddings, or for more rounds of this cocktail.
Bikini Recipe
Yields 10 servings
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Put the listed ingredients inside a saucepan, bring to a gentle boil, agitating so the sugar melts. After that, remove from the burner and let it to cool down completely. Pour into a clean bottle, close it and refrigerate it chilled, it will last for about one month.
Preparing the Batch Mix: Combine the specified spirits and syrup into a sizeable container, allow it to infuse for one hour, then pass it through preferably using muslin, to ensure it's completely strained.
When ready to serve: Add 85ml of your premix into a stirring glass packed with ice, and agitate gently for a minute to cool it down. Pour into an cold coupe glass or equivalent, decorate with some cranberries and finish with a light spray of mandarin oil over the top.
